Pumpkin leaf – Healthy recipe
Ingredients

- Chopped pumpkin leaves 3 cups
2. Add on
- Sliced shallots 5
- Mustard seeds 1/4 tsp
- Coconut oil 2 tsp
- Salt
3. Ground spices
- Shallots 5
- Garlic 3
- Green chilli 1 (seedless ) – optional
- Turmeric powder 1/4 tsp
- Grated coconut 1/2 cup
- Heat coconut oil in a fry pan, then add mustard seeds into it.
- Pop the seeds and add sliced shallots and salt
- Once the shallots are brown, add the ground spices and mix well
- Add the chopped pumpkin leaves and mix well again
- Cook untill the leaves become soft.
Pumpkin leaf stir fry recipe which is called mathan ila thoran in Kerala. This recipe is very healthy and tasty delicious. Once cooked pumpkin leaves are a smooth and creamy compliment to coconut based dishes.
