Plus, it is really easy to make and once you have the ingredients in your store cupboard you can make kitchari anytime.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p>Kitchari is a simple dish of lentils and rice cooked together with spices to a porridge or soupy, risotto like consistency. It is India\u2019s comfort food, often the first solid food given to babies and it\u2019s also used to heal the sick and keep the elderly strong. Kitchari has to be made with specific lentils and rice for the cleansing and healing benefits. These are yellow split mung beans and long-grain white basmati rice.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>Main ingredients \u00a0\u00a0\u00a0<\/strong><\/p>\n<ul>\n<li>Soaked (8hrs) split yellow lentils (mung dal) &#8211; \u00bd cup<\/li>\n<li>Red or white basmati rice: \u00bd cup<\/li>\n<li>Coconut oil: 2 tbsp<\/li>\n<li>Cinnamon stick: 1 inch<\/li>\n<li>Vegetable stock or water: 4 cups<\/li>\n<li>Ghee or coconut cream; 2 tbsp<\/li>\n<\/ul>\n<p><strong>Spices:<\/strong><\/p>\n<ul>\n<li>Cumin seeds: 1\u00bd tsp<\/li>\n<li>Fennel seeds: 1\u00bd tsp<\/li>\n<li>Coriander powder; 1\u00bd tsp<\/li>\n<li>Minced ginger: 1 tbsp<\/li>\n<li>Turmeric powder: \u00bd tsp<\/li>\n<li>Fenugreek seeds: \u00bd tsp<\/li>\n<li>Black mustard seeds: \u00bd tsp<\/li>\n<li>Asafoetida: \u00bc teaspoon<\/li>\n<\/ul>\n<p><strong>Vegetables:<\/strong><\/p>\n<ul>\n<li>Chopped peeled vegetables: any 3(butternut\/ green beans \/ carrots\/ sweet potato): 2 cups<\/li>\n<\/ul>\n<p><strong>To garnish:<\/strong><\/p>\n<ul>\n<li>Fresh lime: \u00bd<\/li>\n<li>Fresh coriander \u2013 \u00bd of a bunch<\/li>\n<li>Coconut yoghurt \u2013 1tbsp<\/li>\n<li>Salt: to taste<\/li>\n<\/ul>\n<p><strong>Preparation <\/strong><\/p>\n<ul>\n<li>Heat coconut oil over <strong>medium<\/strong> heat, in a heavy-bottomed pot.<\/li>\n<li>Add black mustard seeds and cook for a few minutes to release aromatics, and until the mustard seeds have popped well. Add cumin, fennel, and fenugreek seeds<\/li>\n<li>Add the rest of the spices and stir for 1 minute.<\/li>\n<li>Add one cup of water \/ vegetable stock, followed by mung beans, cinnamon sticks, ghee, rice and vegetables.<\/li>\n<li>Then add the rest of the stock (or water) and 1 tsp of salt.<\/li>\n<li>Cover the lid and bring the liquid to boil, then reduce to a low heat. Simmer for about 40 minutes. (you may use a pressure cooker which takes less time)<\/li>\n<li>Check the pot periodically as the rice swells and may stick to the bottom. Add more water if needed<\/li>\n<li>A soupier consistency, and simmer longer to get a thicker stew.<\/li>\n<li>Serve with fresh coriander chopped and folded through, a drizzle of fresh lime juice, spoon of coconut<\/li>\n<li>Coconut yoghurt and salt to taste.<\/li>\n<\/ul>\n<p>Tsp \u2013 teaspoon<\/p>\n<p>Tbsp: table spoon<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Kitchari \u2013 a wholesome meal Kitchari is one of Ayurveda\u2019s greatest gifts to our health because it is a comfort food and a cleansing practice all in one!
